Lemon-Vanilla Cupcakes!!!

These are DELICIOUS cupcakes... I changed the original recipe a bit, but they still came out wonderfully. They sold out at the bake sale!!!

...though that's mostly because most everyone loves a cupcake.

Be prepared: full of sugar and butter (hence the deliciousness...). On the healthier side of things, they have some protein and are very filling because of the greek yogurt. I made about 23 large cupcakes, since I filled each muffin tin almost to the brim.


Ingredients:
1 c. butter, softened
2 c. sugar
3 eggs
4 tsp lemon juice
1 tsp vanilla extract
3 1/2 c. all-purpose flour 
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 c. plain greek yogurt (I use the no-fat type)

Preheat oven to 350˚F.

In a mixing bowl, cream butter and sugar. Beat in eggs, one at a time, and add in lemon juice and vanilla until well combined.

In a separate bowl, combine dry ingredients.

Gradually add to creamed mixture, alternating with greek yogurt.

Fill lined or greased muffin tins.

Bake for 25-30 minutes (however long it takes until a toothpick comes out clean.)

Cool, and then add frosting!!!! I used pre-bought frosting because it needed to be used up, but the recipe I used offered this frosting (I have not tried it, but it's essentially lemon and sugar, so it must be good):

Ingredients for Frosting:
3 tbsp softened butter
2 1/4 c. confectioners' sugar
2 tbsp lemon juice
3/4 tsp vanilla extract
1/4 tbsp grated lemon peel
1 tbsp milk

Cream butter and sugar.

Add the rest of the frosting ingredients, and beat until smooth.

Frost the cupcakes when they have cooled, decorate if you so desire, and d-d-dig in!!!
