Pumpkin Spice Pancakes for Dinner!

Here's the recipe I tampered with a tad to make spicy pumpkin pancakes for dinner tonight, along with hot apple cider. Nothing like good flavor when you have aches and a head cold! These are so delicious... not too sweet (only 3 tbsp of honey) and quite tasty.



Pumpkin Spice Pancakes:
Ingredients:
1¼ cups all-purpose white-whole-wheat flour

3 tbsp. honey
2 tsp. baking powder
¼ tsp. salt
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
Dash of ground ginger
Dash of ground cloves
1 cup milk

½ cup pumpkin purée
1 large egg
2 tbsp. vegetable oil


In a medium mixing bowl, combine the flour, baking powder, salt and spices and stir with a fork to combine.  Mix together the milk, pumpkin puree, honey, egg and oil in a liquid measuring cup.  Add the wet ingredients to the dry ingredients and whisk together just until combine. It's okay if the batter still has a few lumps.


Heat up the skillet, and cook 'em up! 


Flip when the pancakes have slight bubbling on the exposed surface. 


Then, EAT! My sisters had syrup and/or confectioner's sugar on them, but I like them best plain. :)


You may want to double the recipe, since this did not make many pancakes for me. Plus, leftovers are awesome and the recipe is insanely good... look at my sister, marveling at the deliciousness:
